The chef was funny and very gentle with us, and everybody pitched in at some point or another. <\/p>\n\n\n\n<p>Then we got to eat the <s>fruits<\/s> carbs of our labor, with some wine from the farm.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1233-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1233\"\/><\/figure>\n\n\n\n<p>The castle was originally built as a part of the fortification of the city-state of Florence, and later turned into a castle by the Pazzi family. <\/p>\n\n\n\n<p>The location is famous as the hatching point of the \u2018Pazzi Conspiracy\u2019<\/p>\n\n\n\n<p><em>The Pazzi Conspiracy of April 26, 1478, was a failed plot by the Pazzi family, Pope Sixtus IV, and others to overthrow the Medici family&#8217;s rule in Florence.&nbsp;<\/em><\/p>\n\n\n\n<p>They failed in their mission and the Pazzi family was ruined and nearly erased from history. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1234-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1234\"\/><\/figure>\n\n\n\n<p>Many years later the castle and the property was purchased by a wealthy family from Milan that started making olive oil and wine. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1235-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1235\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1236-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1236\"\/><\/figure>\n\n\n\n<p>They also rent out the three other houses on the farm since the family still lives in the castle.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1237-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1237\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1238-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1238\"\/><figcaption class=\"wp-element-caption\">Chianti from the farm in the cellar beneath the castle.<\/figcaption><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1239-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1239\"\/><\/figure>\n\n\n\n<p>They keep some of the original chianti wine that gave the wine such a bad reputation. Chiantis these days are exceptional. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1240-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1240\"\/><figcaption class=\"wp-element-caption\">The oldest wines in the cellar.<\/figcaption><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/travel.monkeydads.com\/wp-content\/uploads\/sites\/11\/images-posts\/1241-pasta-la-vista.jpg\" alt=\"\" class=\"wp-image-1241\"\/><\/figure>\n\n\n\n<p>The original clay jars they used for olive oil production before stainless steel tanks.
